Vegetable Pizza Pull Apart Bread

Doesn't this bread just look just worth drooling over. For me at least I have seen this made by several folks and have wanted to make it for a while now. Funny thing is - I actually have. This is probably the third time around that I am making this but it was only this time that I actually got around to be able to hold everyone off till I took the pictures! A perfect snack (or even lunch) for bread lovers and a great crowd pleaser, this bread not just looks great itself, it will make you look good too. Slicing the bread just right takes some patience. Too deep a cut with make the bread fall apart and too little will not allow for enough filling. Filling it with veggie mixture needs some patience as well but tell you what, in the end it is all very well worth it. So pull away!

Paneer Pulao

This recipe is a delicious option for those vegetarian days that has to be followed...best served alongside with raita and cauliflower fry...:)

Ingredients:
200 Grams Paneer(cubed)
1 Large Onion(chopped roughly)
1 Medium size Tomato(roughly chopped)
5-6 Tbsp Green masala paste
2 Cups Basmati Rice
1 Tbsp Turmeric powder
2 Cinnamon sticks, 1 Bayleaf, 2 Black Cardamom, 3 Green Cardamom, 3 Cloves,1/2 Tsp Fennel Seeds and 2 Strands Javitri
2 Tbsp Oil
2 Tbsp Ghee
1 Cup Coconut milk or regular milk
  • For 1 cup rice add 1 1/2 cups liquids 
For Masala Paste:
6-7 Green Chilies
1 1/2 Inch Ginger
10 Pods Garlic
2 Sprigs Curry leaf
Fist Full Mint and Coriander leaves
  • Add all the ingredients to a mixer jar and grind to a smooth paste add 1/2 cup water to grind into a smooth paste.
Method:
  • On a medium flame heat a pressure cooker add oil and ghee add the paneer and fry till light golden in color drain oil and reserve in a plate.
  • In the same oil add the onion and fry till light pink in color add tomato and fry till moisture has reduced add green masala paste and fry till oil surfaces add the fried paneer and allow to cook for a minute.
  • wash and drain the basmati rice.
  • Add the rice to the paneer masala measure and add water and milk 2 cups water and 1 cup milk add salt and stir and bring to a boil.
  • Place a cover and whistle allow to cook for 2 to 3 whistles switch off the stove allow the pressure to reduce.
Once the pressure has reduced open the pressure cooker add lime juice and freshly chopped coriander mix well and serve right away...:)

Baked Buffalo Broccoli Bites!

Now I realize the post before the last was Brussels Sprouts and here I am trying to sell you guys in to Broccoli - another vegetable that is famous in its notoriety for not being the most liked. But trust you me, after you eat this, you might just discover your new found love for this nutritious member of the cabbage family.
I speak from personal experience. Usually I try to make a vegetable many different ways - in a curry would be my first way, dry pan roasted, oven roasted, tandoori style, mixed with rice as a one pot meal and probably a couple others. Most vegetable are very agreeable to most these methods and come out pretty good. Your good old broccoli on the other hand, not so much. It usually only works for me only when roasted dry with some light seasoning. After tasting these bites, especially with the spicy homemade buffalo sauce, this will be the preferred way to eat broccoli in my household at least for some time to come.

Lemon Crinkle Cookies

If you have been a regular visitor to my blog you must have known by now that I have a clear obsession with chocolate and also most of my baked goodies are either chocolate based or consist of nutella. Every time I think of dessert, I think chocolate. Even when I am online looking for ideas, I type chocolate based search words... even when I am blog hopping, the category I check is chocolate baked goodies. You get the idea.
This time around when I was in the mood to bake some cookies I was again drawn towards making double choco, fudge (God help me :)). But this time I struggled hard and overcame my obsession. It was mainly because of my not-much-of-a-chocolate-fan hubs (how can you!). Baked a lemon cookie instead. I loved the results so much that from now on you will be seeing lots and lots of citrus in my baked goodies lol. These cookies are so fresh, light and flavorful that even a no dessert and only chocolate person like me ate 2 whole cookies (much to my hub's surprise) ha ha!!

Roasted Parmesan Garlic Brussels Sprouts with Sour Cream Dip


Who wants to eat brussels sprouts, right? If you were to make a list of commonly available vegetables that most people dislike, these little guys would most probably be very near if not the top of that list. Heck they use these even in TV shows when they have to show parents trying to stuff veggies into kids and the kids kicking up a fuss. Well, not in my family. Hubs loves them and the way he likes to put it "Who wouldn't especially if made the way you make 'em"! This was a new vegetable to me as well until a few years ago when their cute little cabbage shape got my attention. No points for guessing that curiosity got the better of me and I got a batch immediately. Of course the first thing I tried was to cook them like cabbages - in a curry. That was a success. Since then I have cooked them several different ways but these roasted ones are the most popular in my family. They are easy to make, not to mention very nutritious and with their crispy exterior and juicy soft insides, they make a great appetizer or a side to a meal.

Nutella Banana Turon/Filipino Banana Turon

Something so simple and tasty from the country of Philippines truly amazing recipe everyone at home enjoyed turon and I'm very proud to prepare two amazing and famous and simple recipes from Philippines...:)

Ingredients:
2 Robusta Banana
5 Almonds, 10-15 Pistachios, 10-15 Ground Nuts
Dry Shredded Coconut
2 Tbsp Maida/All purpose flour
Spring Roll Sheets
Nutella
Oil for frying

Prep Up:

  1. Thaw the spring roll sheets ahead of time before use.
  2. Dry roast the nuts on a medium flame allow to cool and chop into fine pieces.
  3. Peel and half the banana cut into two quarter place a damp cloth over the cut banana.
  4. In a bowl mix the maida with 2 tbsp of water and create and smooth paste.
  5. Heat Oil in a wok.
Method:
  • Place a spring roll sheet on a flat surface 
  • Spread nutella a tbsp of nutella on the sheet sprinkle the roasted and chopped nuts sprinkle the grated coconut and place the banana roll into spring roll seal the edges with the maida paste and fry in hot oil.
  • Once the rolls turn light golden in color drain the oil on a paper towel and serve with ice cream...Enjoy...:)

Strawberry Milk Shake

Ingredients:
200 Grams Strawberry
1/2 Cup Sugar
4 Scoops Vanilla Ice cream
2 to 3 Cups Milk
Method:

  1. Clean the strawberry cut into half and add to a mixer jar along with sugar grind till smooth puree.
  2. Add milk and vanilla ice cream and blend till well combined.
  3. Serve the milk shake chilled or in room temperature...Enjoy...:)

Kit Kat Milk Shake


 It was a nice recipe liked the biscuit flavor and coco taste...

Ingredients:
8 Kit Kat Fingers (Broken in halfs)
3 Scoops Ice Cream chocolate or vanilla
2 Cups Cocomilk
1/2 Milk
Method:
  • For 2 Cups of warm milk add 2 to 3 Tbsp of  sweetened cocopowder and mix well allow to cool and add to a freezer safe bowl place in the refrigerator and allow the milk to form crystals remove from fridge and give a good mix before adding to a mixer jar.

  • Add the kitkat, crystallized coco milk, vanilla icecream to a mixer jar blend well add milk if need to blend the ingredients till well combined.
Pour the milkshake into serving glass garnish with kit kat finger and serve right away...enjoy:)

Red Velvet Nutella Mug Cake

Ingredients:
4 Tbsp All purpose flour/maida
3 Tbsp Milk, Oil and Nutella
1/2 Tbsp Red Food Color
1/4 Tsp Baking Powder
1 1/2 Tbsp Powdered Sugar (Optional)
 For Frosting:
1/2 Tub Cream Cheese
3/4 Cups Powdered Sugar
2 Sp Milk (Optional)
1/2 Tsp Vanilla Extract
1 Tbsp Butter
  • Add all the ingredients to a mixing bowl and beat well using a hand blender or a balloon whisk beat well till smooth well combined and fluffy store in a glass container and allow to cool in the refrigerator  before use.
Method:
  •  In mixing bowl add nutella, milk, egg, oil and sugar whisk till well combined.
  • Add the flour and baking powder to the wet mixture and whisk till well combined.
  • Divide the mixture into serving mugs and place in the microwave for 2 to 3 minutes till well done. allow  to cool and decorate with frosting and serve...enjoy...:)

Dhingri Matar/ Mushroom Peas Curry

Up until a few years ago in India, before they started farming mushrooms and all those supermarket chains started opening up and selling those farmed ones, the only kind of mushrooms available were the wild ones. They used to be a rarity that would only be available for a few days during the monsoons. You would find some vendors, usually local farmers that found them growing somewhere, selling them in small wicker baskets along the roadside. And boy were they gone fast. If you didn't get there in time, they were gone in the first few hours. People loved them then, and they love them now. We are no different in our family our little one included. I have come to make mushrooms many different ways. Here I present a mushroom curry done in the north Indian style. It has the bite of the mushrooms, the kick and heat from the spices along with the sweetness from the peas. One of the ways we love our mushrooms.

A lot is said about Valentine's day. It means different things to different people, all related in some shape or form to love and caring. Yes, you do not need a day set out to celebrate love but it couldn't hurt to take one day of your lives in a year to make an extra effort to express how you feel, go out of your way to show how much you care. When it comes to love and caring, it is always about the two most favorite people in my life, my little princess and hubs. One of the little ways in which I express myself is cooking something for them, and that 'something' almost always involves chocolate. Nutella Chocolate Fondue

This is one of the most easiest and fun loving recipe I've ever made. very simple hot dessert recipe which will never go wrong...if there is leftover fondue it can always be covered and refrigerated and can be reheated and topped for icecream or reused as fondue. just wow your family and friends with this recipe...

Ingredients:
100 Grams Cooking Chocolate 80% sugar
2 Sp Oil
100 Grams Cream
3 Tbsp Nutella

Chocolate fondue can be served with any condiments of your choice...I served with strawberry, vanilla cake marshmallow and orange...
Method:
  1. Any microwave safe bowl can be used for the recipe first of all chop the cooking chocolate and add to the bowl add oil and cream place in the microwave for 30 seconds.
  2. After 30 seconds remove from microwave and give the chocolate a good stir there will be lumps dont worry.
  3. Add nutella and mix the chocolate once more place in the microwave for an additional 30 seconds to melt the chocolate thoroughly.
  4. Constantly keep checking and stirring the chocolate every 10 seconds.
  5. Once the chocolate has melted remove from microwave and give it a good stir.
Serve the chocolate warm with favorite condiments enjoy...:)

Baby Potatoes Green Peas & Prawns Masala/ Eral Urulai Kizhangu Thokku

I dont have to brag much on the recipe its of course a traditional south indian recipe which is modified a bit to help us prepare the recipe easy and fast and yet no compromise on taste and flavor its still the same. I personally love the recipe when served along with rice topped with ghee and dhal.

Ingredients:
1/2 Kilo Prawns (shelled devenied and washed thoroughly)
100 Grams Peas (Par boiled)
200 Grams Baby Potetoes (Par boiled)
1 Cup Shallots(cut in halfs)
1 Whole Garlic(peeled and crushed a bit)
2 Chilies (Slit)
1 Tbsp Ginger garlic paste
1 Sprig Curry Leaves
Mint and coriander for garnish
1/2 Lime
3 tbsp Oil

1/2 Tbsp Fennel seeds
1 Tbsp Garam masala Powder or kitchen king masala
1 Tbsp Chilly powder
1/2 Tbsp Turmeric
1/2 Tbsp Coriander Powder
1/2 Tsp Asafoetida
Salt to taste

Method:
  1. Heat oil in a wok on a medium flame.
  2. Add fennel and allow to splutter a bit add ginger garlic paste asafoetida and curry leaves fry a bit till raw flavor has gone.
  3. Add crushed garlic and fry till light pink. add the shallots chilly and fry till transparent.
  4. Once the onion is transparent add coriander powder, chilly powder, garam masala and turmeric fry till oil separates a bit.
  5. Add the baby potatoes and peas fry for a minute add the prawns and salt and fry a bit.
  6. Add lukewarm water stir cover and allow to cook till prawns are done.
  7. Once the water has evaporated a bit and the prawns are done garnish with freshly chopped mint, coriander and lime juice. serve hot with rice...enjoy...:)

Hot Cheesy Spinach Dip with Garlic Toast

Its snack time at USMasala again. And talking about snack time, it is just in time for the weekend to gather around your big flat screen with your favorite people and favorite snacks and just have a good time. Now I don't claim to be a big fan of the game, heck I barely know how it is played. I am still at heart the good old girl from that part of the world that lives and breathes a good game of Cricket. But watching a great game with family and friends gathered around definitely brings back some vivid memories. Just remember to handle this ever popular dip with care. It comes out of the oven really hot and just so flavorful and yummy with all that creamy spinach goodness ready to be scooped up with your favorite chip or a nice crunchy garlic toast that if you got too much into the game you might be scraping the bottom of the bowl - no pun intended.
