Pizza Samosa

Trust me this was my ultimate experiment was doubtful how on earth is this gonna taste...it was super awesome yaara loved it...tell me who wouldn't love  a hot samosa with pizza flavors and cheese melting inside its like eating double trouble all at once...:P calorie conscious people can close their eyes...:D Whatever toppings are used in pizza can be stuffed into a samosa but make sure the product is chopped into tiny pieces it will be easy for stuffing...:)

Ingredients:
1/2 Bell Pepper (Chopped into tiny cubes)
3 Cubes Cheddar Cheese (Chopped into tiny cubes)
50 Grams Paneer/Cottage Cheese(Chopped into tiny cubes)
Pizza Seasoning / Italian Seasoning 
1/4 Tsp Chilly Powder
Oil for frying
Salt 

Filling: 
  • Heat a wok add 2 tbsp oil fry the bell pepper on a medium flame till its soften a bit add paneer chilly powder salt and fry for a minute add the 1/4 sp italian seasoning and fry.
  • Allow to cool completely mix in the cheese and reserve. 
For Dough:
1 1/2 Cups Maida/all purpose flour
1 Cup Yogurt 
1 Tbsp Ghee
Salt

Prepare Dough:
  • In a mixing bowl add maida salt and yogurt knead the dough if needed sprinkle water add ghee and knead  till the dough is soft cover allow to rest for 1 hour.

Method:
  • Roll out the dough into thin chapati using a round cutter cut out into equal rounds.
  • Add 1/2 tsp of sauce and top with filling fold and seal the edges. secure the edges using a fork it also gives a cute crimp effect on the edges.
  • Heat oil in a wok on medium flame fry out the samosa till light golden in color drain the excess oil out on a paper towel.
Serve hot along with chai...enjoy...:)

Waring while serving please tell the person there is hot melting cheese inside the samosa it may burn their mouth...if they eat more than expected I'm not responsible...DHANYAVAD.

Palak Paneer Samosa (Cheese & Spinach Samosa)


I'm almost become like a mad scientist experimenting on new flavors and taste keeping in mind it has to have a traditional element...talking about the samosa it was awesome bursting with flavors juicy cheesy and everything yum...who doesn't like palak panner its one of our traditional recipe. incorporating it into a samosa was my ultimate challenge results were super duper...:)

For Filling:
1 Bunch Spinach(frozen or blanched drained and chopped finely)
1 Tbsp Ginger Garlic Paste
1/2 Onion(finely chopped)
1/2 Tomato(deseeded finely chopped)
2 to 3 Green Chilies (finely chopped)

1 Tbsp Yogurt
50 Grams Paneer (Crumbled)
4 Cubes Cheddar Cheese(Finely chopped)

1/2 Tsp Chilly powder
1/2 Tsp Turmeric powder
1/2 Tsp Garam masala powder
1/2 Tsp Cumin powder
1/2 Tsp Coriander powder
1/2 Tsp Pepper Powder

2 Tsp Ghee
1 Tsp Oil
Salt as per taste

  • Heat a wok on medium flame add ghee and oil. add the ginger garlic paste fry till raw flavor has gone.
  • Add onion fry for a minute add the tomato and chilly fry till tomato reduces a bit.
  • Add the powdered spices and fry for a minute add the yogurt and fry a bit.
  • Add spinach to the tomato mixture and fry a bit then add the crumble paneer and salt fry for a minute. remove from flame allow to cool completely.
  • Add the chopped cheddar cheese and mix well reserve the filling in a bowl.

For the Dough:
1 1/2 Cups Maida/All Purpose Flour
1 Cup Yogurt
2 Tbsp Ghee
1/2 Tsp Salt

  • In a mixing bowl add maida yogurt and salt start kneading the dough if needed sprinkle water once dough has formed add ghee and knead to a soft dough cover and allow to rest for an hours time.
  • Take a portion of the dough and roll out into chapati using a cutter cut the rolled out chapati and reserve.

Method:
  • Heat oil in a wok on medium flame to fry the samosa.
  • Take the cut out dough rounds and place a spoon full of filling in the middle wet the edges of the dough slightly.
  • Fold the dough and pinch in the middle to secure seal one edge of the dough till center and fold the other half to form a triangle.
  • Gently drop the samosa into oil and fry till golden brown drain oil and reserve on paper towel.
Serve hot with Chai and ketchup...Enjoy...:)

Cheese Fondue with a Twist

Yummy yummy tasty tasty treat for my tummy and for some one special too...melting hot pot of spicy cheese served with favorite condiments is truly a feast for a dull cold winter nights...:) I've used few local and international blend cheese for this recipe.

Ingredients:

100 Grams Brie Cheese
100 Grams Grinzing Cheese or Monterey Jack Cheese
50 Grams Britannia Processed Cheese

All these cheese are available in major super markets in Bangalore @ MG 1 Food Hall, Auchan hypermarket, Big market and Big Bazaar.

3 Tbsp Corn Starch
1 Cup White Wine
5 Cloves Garlic
5 Sprigs Cilantro
2 Pinch Nutmeg Powder
1/4 Tsp Black Pepper Powder
A pinch Cinnamon Powder
1/4 Tsp Green Chilly Paste
Salt to taste.

To Serve:
Carrot Sticks
Celery Sticks
Par boiled Cauliflower 
Chicken Sausages
Bread Cubes

 Prep Up:
  1. Grate the Cheese and mix the corn flour and reserve in a plate.
  2. Clean wash and finely Chop the cilantro and garlic.
Method:
  • On a medium flame heat a heavy bottom pot add wine and bring to a boil slowly add the grated cheese and keep stirring add garlic and cilantro to the melted cheese and keep stirring add salt if needed. add the spices nutmeg, pepper and cinnamon powder and stir add the chilly paste and stir bring to a boil and reserve in a fondue pot on a low flame and serve with condiments enjoy...:)

Chocolate Chip Icecream

 March 5th being my birthday i prepared this chocolate chip icecream my family and friends loved this recipe its very simple and no fuss recipe do follow the steps and prepare the recipe your self...:)
1 Liter full fat Milk
1 Cup Sugar
1 Cup Chocolate chips
4 Tbsp Corn Flour
4 Tbsp Unsweetened Coco Powder
2 Tbsp Gelatin
2 Tbsp Liquid Glucose
500 ML Heavy Whipping Cream
Method:
  • In a heavy bottom pot add milk and sugar bring to rapid boil on medium flame.

  • In a bowl add the cocopowder and the cornflour add water and mix till there are no lumps.
  • To the 2 tbsp of gelatin add 1/2 cup water and allow to soak for 10 minutes.
  • Once the gelatin has soaked for 10 minutes place in microwave for 30seconds and melt.

  •  Place the liquid glucose in the microwave for 30 seconds and melt.
  • Add the chocolate mixture to the boiling milk and stir constantly till combined.
  • Add the gelatin and the glucose and stir.
  • Once you see the chocolate custard coat back of the spoon remove from flame and allow to cool in room temperature.
  • In a large bowl add the heavy whipping cream and whisk till soft peaks are formed.
  • Add the cooled custard and whisk the cream till combined.
  • Divide the chocolate chips in 2 batches and one batch of chips to the cream and mix well add the second batch of chocolate on top mix a little.
  • Place a cling film or a plate on the bowl allow the mixture to set over night in the freezer.
  • Once the mixture is set your ice cream is ready to serve...scoop the icecream  garnish with wafer and serve right away...Serve with loads of love...Enjoy...:)

Rose Milk Icecream

Ummm...Yummy Yum Yum...I love to cook and also love watching other people cook and follow a few people who can cook up some wonders...:D following a trail of food bloggers i met a young and handsome cook from Hyderabad he is a Building contractor  by profession and always loves to experiment in his kitchen and wishes to open his own restaurant and serve people his creations isn't a wonderful idea...wishing Cherukuri Prasad all the best of luck on his dream venture. One day prasad posted rose ice cream which i love and have enjoyed eating rose icecream as a kid i wanted to feature prasads recipe first then when i spoke to him on a call he told me to just use whipping cream and rose syrup which turned out super and exactly like rose icecream from my childhood if you want to prepare prasads version on rose milk ice cream please Click Here for the recipe in detail...:)  
1/2 Liter Heavy Whipping Cream
1/4 Cup Rose Syrup
Cherry and Tutti fruity for garnish
  • If you cant find rose syrup in your country you may substitute with 2 to 4 tbsp rose water and red food color.
  • I've also used 20% sweetened heavy whipping cream and the rose syrup also contains sugar so I've avoided using sugar for this recipe it turned out perfect and we liked it if you want to add sugar you may add extra sugar.
  • Use frozen whipping cream its fast and easy to prepare add the frozen heavy whipping cream to a large bowl.
  • Using a electric beater beat the heavy whipping cream till it doubles in volume and forms soft peaks.
  • Add 1/4 cup of rose syrup and blend one last time till the rose syrup is incorporated well in the heavy whipping cream.
At the same time dont blend to much or the cream will turn into butter once you can see soft peaks forming avoid whipping more just add rose syrup and blend a bit.

  • Cover the bowl with a cling flim or plate and freeze the icecream over night till its set...:)
  • Scoop the ice cream in a bowl garnish with tutti fruity and cherry serve with love and enjoy...:)

Keema Mutter Maggi Noodles

Maggi and other branded noodles are always know to be unhealthy diet and are advised not to be eaten and served to Kids....Hey this sounds like a horror movie script to me come on guys I'm sure atleast 90% of us had working parents as kids and the best snack served to us after school was maggi after tasting all the goodness as kids few diet freaks blame it I agree to certain extent we are suppose to control our diet and other junk food habits but after having all of this as kids now as very knowledgeable adults we start to criticize...after reading many criticized versions of instant noodles not healthy on web and on news paper...I finally planned to do my version on maggi which is so tasty tangy and yummy for this hostile winter in Bangalore this is how i rock...let me tell you it was truly a spiritual experience for me and I'm loving it and will surly love and cherish it for the years to come....:)

Ingredients:
2 Packets Maggi Noodles
1 Cup Lamb Mince or chicken
1/2 Cup Green Peas
1 1/2 Onion roughly chopped
1 Tbsp Ginger Garlic Paste
6-8 Green Chilly  finely chopped
1 Tbsp Chilly Powder (optional)
1 Tbsp Garam Masala (optional)
1 1/2 to 2 Cups Water
2 Tbsp Ghee
1 Tbsp Oil
Salt to taste
For Garnish:1/2 Lime juice, Mint and coriander (finely chopped)
Method:

  • On medium heat...place a heavy bottom wok add ghee and oil.
  • Add the ginger and garlic paste and fry till there is no raw flavor in the ginger garlic paste.
  • Add onion and fry till light pink add the mince meat and fry till moisture separates from the meat.
  • Add green chilies, chilly powder, maggi masala provided inside the noodle packet and garam masala  fry till oil separates to the sides.
  • Add salt, peas and water cover and allow the meat to cook till well done.
  • Add the noodles to the meat gravy cover and cook for 2 minutes mix the meat and noodles till well combined add mint and coriander top with lime juice and serve hot...with onion and lime wedges...Enjoy...:)

You may add vegetables of your choice to the noodles...if you like the soupy consistency add 2 1/2 cups chicken broth to cook the meat instead of adding  water.

Lajawab Chicken (Tortilla Lajawab)

Wishing Everyone Happy New Year...!!!
I found this chicken lajawab recipe on corn flour box seemed to be pretty simple and wanted to give it a go I was totally not prepared for this post but filmed it anyway it turned out really well this recipe is so simple with less number of ingredients as per the taste test it tastes like chicken kabab  and also like tandoori chicken the marinate or coating sticks really well to the chicken while frying the recipe however asks for deep frying since i used boneless chicken i shallow fried turned out really good...:)
Ingredients:
250 Grams Chicken Breast
1 Tbsp Ginger Garlic Paste
1 Medium Onion
1 Tbsp Chilly Powder
1 Tbsp Garam Masala
1/2 Lime
Corn Flour
Salt to taste
Oil for frying
  • Cut the breast into strips wash twice pat dry reserve in a bowl.
  • Peel one medium onion rinse in water add to a mixerjar and grind to a smooth paste with out adding any water.
Marinate:
  • In a bowl add the cut chicken strips, garam masala, onion paste, lime juice and salt mix well  cover and allow to marinate for 4 to 5 hours in refrigerator.
Lets Prepare:
  • Roll the chicken strips in cornflour and remove excess cornflour from the chicken.
  • Heat a pan with 4 to 5 tbsp oil and shallow fry the chicken turn the chicken every 5 minutes. once the chicken is well done drain the excess oil on a paper towel and serve hot with hot sauce...enjoy..:)
To prepare tortilla lajawab:
Tortilla 1 packet
3 Bell Peppers 
1 Large Onion
1 Tsp Chilly Flakes
1/4 Tsp Pizza seasoning & Basil
Ready to use Garlic Spread
Salt to taste
If you stay in Bangalore these tortilla wraps are sold in Thomas bakery wheeler road  Frazer town located in cantonment.

  • Slice the bell peppers and onion and saute in a pan with a dash of salt, chilly flakes, pizza seasoning and basil saute till bell peppers soften a bit. 
  • Heat  the tortilla in microwave for 2 minutes.
  • Spread the garlic sauce on the tortilla place the bellpepper half way on the tortilla place the chicken strips on the bell pepper and wrap the tortilla serve hot enjoy...:)
