Tandoori vegetable paneer pizza ~ all homemade!

love Italian food. Love eating it and love cooking it. Love the different layers, flavors complex yet simple, exotic yet rustic - flavors that have stood the test of time - just like Indian food. You can sense the rich culture and the legacy from the food. When there is a mention of Italian food the first thing that comes to mind is of course the ever-popular Pizza. You guessed it, I love Pizza... a lot. Regardless of crust or toppings - pan, hand-tossed, deep dish, Brooklyn style, thin-crust even the bread and bagel pizza :). A soft chewy bread loaded with veggies and other toppings with a generous helping of cheese! Just can't stop raving. Coming to the US, I had my first ever pizza at Pizza Hut a few years ago... and boy.. I was completely hooked :-) India - at the time - was still coming of age as far as Italian food was concerned so I'd had pizza a couple of times, but this was different. Ahh the good old days.. we used to order delivery, be total couch potatoes and sit in front of the TV for hours watching the 24 hour marathons of Law and Order.

Paneer makani naanizza!

eftovers can be an issue at times. Mostly hubs will not want to eat it the following day (he says he does but I can tell he'd rather not). It is more of an issue when your leftovers are dishes that are close to your heart and you just spent your entire weekend cooking them up. It just so happened this past weekend that I had leftover Panner Makhani and Naan, two things that I just cannot explain how much I love. Now of course I couldn't eat it all by myself and it would break my heart if I had to throw away paneer in any shape or form.
You of course guessed where this is leading up to. Long-story-short, all my leftovers were gone in no time. Not until later, when I pointed out, is when hubs realized they were leftovers. This was not the first time I had made these insanely delicious fusion pizzas that kiddo and I like to lovingly call 'nanizza'. It never fails me as was the case this time around. Kiddo totally loved it too - the result that pleases me the most.
Naan based pizzas are becoming increasingly popular, so much so that the frozen version of it have started to appear on regular grocery stores. I have made it with different toppings like aloo gobhi, palak paneer and even baingan bharta and this time it was paneer makhani.

Pizza Buns


ast night I was officially declared food crazy by hubby. We had dinner, tucked our little one into bed, watched some TV and then as we were getting ready to call it a night, this crazy idea struck me. God help me, it was almost close to midnight but I had to make these buns that would be stuffed with pizza sauce and pizza toppings. I call them pizza buns not sure if such a thing even exist. With much excitement I explained the recipe to poor hubby who listened to me with his jaw dropped to the floor. I could see him calling me crazy in the back of his head - not that I cared at the time - I just had to make it. I am sure some of my readers will identify with me (please say yes, its very important for the self-affirmation of my sanity :)
Anyway, believe it or not, the project took a little over an hour and by some insanely ungodly hour we were standing in the middle of the kitchen enjoying the pizza buns. I was so tired I don't even remember what they tasted like but hubby tells me they were awesome as he ate a couple (and he never eats anything that late).

Mushroom Truffle Pizza with Arugula

After Mr. Yeast became my friend and successfully baking some basic dishes, of course Pizza came to mind. Then I got the dough right. Since then pizza has been a regular in our home. I have tried different kinds ranging from you regular veggie, cheese, chocolate to even an Indian Paneer Tikka version. Pizza has always kept me curious of what you can do with it.
A few months back hubby had to go to Canada on a business trip. He extended his trip by a couple of days and we decided to make a vacation out of it and we all went as a family. One evening in Ottawa city we were looking for a place for dinner... anything besides Indian. Don't get me wrong, Canada has some of the best Indian food, arguably better than you find here in the States, its just that we'd had it a couple of nights in a row already. As we walked around the quaint little marketplace, stopping by the entrance of every restaurant and reading the menu posted on the door (and rejecting them as they did not serve any vegetarian dishes besides maybe a salad) we found this pizza place. They had this mushroom truffle pizza. We asked the waitress if it had any meat in it and ordered it. They had it simply as a pizza with a spread of a mushroom pesto made in truffle oil (I made it slightly different as you'll see in this recipe).  That was our first introduction to truffles and let me tell you if you have never had truffles, I bet it will change your list of the top few things you have ever eaten.
That pizza has since been stuck in my head. The other day I found this coveted little bottle of truffle oil in our local farmer's market. Hubby was like 'You sure you got the right thing, you can't have a five ounce bottle cost thirty five bucks!' Deep down I knew he was lucky I wasn't asking him to buy me the real truffles :) I haven't had the pleasure of having them but have heard a couple of them could cost you upwards of a grand! Anyway, the oil worked best for my budget and worked it sure did... a few drops of it changed the 'Mushroom pizza' to a 'Mushroom truffle pizza'. Can you not tell the difference just from the name!
He ate the pizza I made that evening. He hasn't complained about it since.

Paneer tikka Pan Pizza

I love pizza.. regardless of crust or toppings (of course without meat) - pan, handtossed, deep dish, brooklyn style, thin-crust even the bread and bagel pizza :-) a soft chewy bread loaded with veggies and other toppings loaded generously with cheese! Just can't stop raving about pizzzzzza.. I had my first ever pizza at Pizza Hut a few years ago after I got married and came here.. and boy.. I was completely hooked :-) Ahh good old days.. we used to order delivery, be total couch potatoes and sit in front of the TV for hours watching the 24 hrs special law and order marathon episodes :D
Never tried making them at home (r u kidding, never ever made even a simple daal before getting married) pizza was sooooo out of my comfort zone, but then I started getting comfy in the kitchen trying, tweaking, started baking and all.. and one good day made pizza.. I was jumping all around the house.. it was so good so perfect (now I make different kinds). Today I will talk about pan pizza.. I don't use a cast iron pan but instead use my round non stick baking pan (read about it in some food magazine).. yeah you heard me right, a regular baking pan. It comes out so perfect every time. You have to try it to believe me. Can be made using any kind of topping but my love for paneer and pizza is behind this recipe. In fact Pizza Hut has  a paneer pizza on the menu in India. Also I use whole wheat flour instead of the traditional all purpose flour to reduce the guilt ;)
