Masaledar bharwan baingan/ Spicy Stuffed Eggplants
Eggplants in my home is always about hubs.The little one and I like it too but with hubs its like nothing I can explain in a few words. Guess the only way he wouldn't eat them is raw. To go on a little more, he loves all different kinds of them, the italian, chinese, indian, purple, green, white and most likely any other kinds that he and I haven't even seen yet. His most favorite kind however are these baby eggplants just the way I make them *smirk*. You do have to give him some credit though, the eggplant is no doubt a very versatile vegetable. Fry them, saute them, bake them or even mash them and they always come out a winner.
I make them many different ways and this way is one of the most frequent as this one is my favorite eggplant preparation too. The eggplants are thoroughly soaked in spices and yet retain their beautiful petite shape making them very presentable for when you are entertaining. The kick of the spices and tang from the lemon juice and amchur along with the creamy texture of the nicely cooked eggplant make them ideally suited to be eated either with parathas or with rice and some daa. And yes, remember to leave the stems on to make them extra fun to eat.

Achari Baingan (Eggplant curry with pickle spices)

It is basically a tangy and spicy dry curry flavored with traditional indian pickle masalas. The panch phoran is the secret behind the unique flavor in this dish as it imparts the awesome achari flavor to the oil when heated and infuses a very distinct aroma and taste to the dish. Panch Phoran is a spice mix used in Eastern Indian cuisine (Bengali cuisine) and is a mix of the five whole spices – nigella seeds, fennel seeds, fenugreek seeds, mustard seeds and cumin seeds all in equal quantities. Panch is Five in hindi and Phoran is Spice seasoning, so it literally means five spice seasoning. This spice mix can be used with any kind of vegetable stir fry/roasted vegetables. Just put them in hot oil till the mustard seeds splutter, so as to release the aroma of the spices. Add any vegetables you want, stir fry, serve. It really is as simple as that. Baingan bharta/ Roasted Mashed eggplant

It is basically a mashed roasted eggplant mixed with several spices, (lots of) garlic, tomatoes and preferably some other veggies.
The way he tells me about its origins is totally believable. Not having any clue about what goes in a classic bharta recipe he decided to add any veggies he had at the time in the refrigerator and as well every spice that he was familiar with (adding Hing and Amchur were my touch to it).
He basically messed up by making it this one time for me. Now if there is ever eggplant bharta made in my household, it is him at the stove battling it out. Of course I am there to help out, like roasting the eggplant in the oven was my idea (he used to roast it on the stove-top and make a mess ;)
Can be served with roti, paratha or rice, for lunch or dinner.You can also serve them with flat breads or crackers and they make for a great appetizer. personally like to eat it rolled up inside a paratha :)So here it is... enjoy!

Daal- baati
This is one of my mom's most amazing dishes and is the most sought after by family and friends alike. She has made this dish for as long as I can remember. She has even gotten compliments from some guests who were even the natives of that state to which this dish belongs.
Daal baati is a very popular dish from the state of Rajasthan, a wholesome power packed delicious meal. Dal, or lentil curry, is made of several kind of lentils which are cooked along with the masalas to make a tasty dal or curry. Baati, a rounded ball of dough that's baked in a charcoal fire or oven. Baati is made out of wheat, gram flour, millet or a mix of maize flour served dunked in the delicious daal with loads of ghee, tastes heavenly mouthwatering!
Mom did tweak the original recipe a little. The original recipe does not have veggies in the daal and the baati is made with plain flour. The addition of veggies, I believe, makes an already great daal even better. Addition of spices in the baati flour makes it even tastier. Mom used to make it on a gas grill. My touch to this is just to make it in a regular oven. It is not as high on the list of favorites on hubby's list so I do not come around to make this dish very often. Guess I could not wait any more :)
I got a few recipes from my mom written down in a notebook that I brought with me to the US after I got married. It is hands-down the best cookbook among tons of others that I own. I had this one bookmarked in the notebook for a real long time and only finally got around to it. From hubby's reaction it appears it climbed up a few steps in his charts :)
Don't be deterred by the long list of ingredients. You find most in a typical indian spice rack. Once you have them together, the method is really simple.

Hyderabadi Bhaghare Baingan / Eggplant in sesame peanut sauce
Hyderabadi cuisine refers to the cuisine from a region in the south-eastern part of India. It is highly inspired by the Mughlai cuisine.The word "Nawabi" is as synonymous with the Hyderabadi cuisine as "Shahi" is with Lucknowi. Hyderabadi recipes are famous for their rich taste and unique use of ingredients, roasted spices and aromatic flavors. This eggplant dish has all these components and more... baby eggplants simmered in roasted peanuts, sesame, coconut sauce with lots of indigenous spices cooked to perfection. It is utterly lip-smacking... even if you are a eggplant hater you can't ignore this one. It is very easy to prepare and has a very rich creamy taste which will compel you to make it again and again :) or if you have an eggplantoholic hubby as mine.. he will compel you to make it again and always. Also you can bribe him with this to get him to take you shopping for the whole day or spa or just whatever. I have used it for this trick a few times lol.. shhhh....:D

Eggplant Parmesan

Then after coming here one day he made these (frozen one) for dinner... and I liked it. It was different but good. To impress him I tried making it at home and it was a disaster.. runny sauce, raw eggplants and rubbery cheese. You name it everything went wrong. I promised to myself to never attempt making this again... ever. But then never say never and I tried again and again till I got to this recipe, and now he says this is one of the best he has eaten.
I cannot say this is the authentic recipe but this my version, a healthier and easy way. Instead of deep frying the eggplants, I bake them in the oven and use store bought or home made marinara sauce (see notes) for the sauce. Do give it a try and let me know how it came out. Here's what you need.
