Fruit Slush (Watermelon, Lychee, Kiwi and Mango)

People have different names for these beauties like slush, fruit frappe, fruit crush etc i don't know what to name it anyways if its summer i prepare these in bulk and stock up in my freezer as a summer fix. normally i prepare these slush with just water melon and mango this year there are 2 new additions with lychee and Kiwi...Kiwi fruit slush is my favorite since it has jeera powder and has perfect sour taste...

Lychee Slush:
200 Grams Fresh Lychee (Peeled and Pitted)
1 Can Lychee Juice
1 Can Coconut Milk
2 to 3 Tbsp Lime Juice
4 to 5 Tbsp Sugar 
Lemon Zest Optional
  • Add the lychee sugar lime juice in the blender first run it twice till well blended if there are chunks of lychee its alright. add lychee juice and coconut milk pulse twice and reserve in a bowl.
  • Place the bowl in the freezer to from crystals once crystals are formed break it up and add to blender blend till the ice is crushed garnish with lime zest and serve right away.
Please adjust the sugar and lime juice as per your taste buds.
Kiwi Slush:
2 Kiwi Fruits(Peeled)
1 Liter Apple Juice
1 Tbsp Lime Juice
1/2 Tsp Jeera Powder
1/2 Inch Ginger (peeled and chopped)
5 to 6 Tbsp Sugar
2 Sprigs Mint 
  • Add kiwi, ginger, sugar, lime juice and mint to  blender blend well till kiwi fruit goes to a mush add apple juice and jeera powder and pulse twice.reserve in a bowl.
  • Place the bowl in the freezer to from crystals once crystals are formed break it up and add to blender blend till the ice is crushed garnish with mint and serve right away.
Please adjust the sugar and lime juice as per your taste buds.

Watermelon Slush:
3 Cup Water melon(cubed and deseeded)
2 to 3 Sprigs Mint
4 Tbsp Sugar
4 Tbsp Lime Juice
1/2 Tsp Pepper powder
1 Liter Club soda
  • Add the water melon, mint, sugar, lime juice and pepper powder to a mixer jar and blend well add a splash of water if needed blend well and reserve in a bowl.
  • Place the bowl in the freezer to from crystals once crystals are formed break it up and add to blender along with club soda blend till the ice is crushed and serve right away.

    Mango Slush:
    2 Cups Mango
    1/2 Inch Ginger
    2 Sprigs Mint
    1/2 Tsp Lime Juice
    5 to 6 Tbsp Sugar
    1 Liter Club Soda or Orange Juice
    • Add mango ginger mint lime juice sugar to the blender and blend thoroughly till well blended into a pulp water can be added reserve in a bowl place in the freezer to form crystals.
    • Once frozen break it up into tiny chunks and add to the blender along with club soda blend well and serve it up....Enjoy...:)

    Arabian Pulpy Grape Juice

    Gosh I cant believe its April already I was in no mood to cook this hot weather is irritating me and everyone around i planned to do something simple and today pulpy arabian grape juice stands no 1 in my to do list it was super refreshing and yummy...:)
    Ingredients:
    400 Grams Red or Purple Grapes(Seedless)
    2 Tbsp Rose water
    2 Lime Juice
    1/2 Tsp Salt
    1 to 11/2 Cups Sugar
    To dilute water or club soda as per your taste.

    Measure for sugar depends how sour the grapes are if its to sour add 1 1/2 cups...

    Method:
    1. Add the grapes to a colander remove the steams and rinse thrice allow the water to drain.
    2. Add the grapes to a pot that fits inside your pressure cooker  add sugar to the grapes. steam cook the grapes in the pressure cooker for 4 to 6 whistles till the grapes cook.
    3. Remove the pot from pressure cooker allow to cool.
    4. Mash the grapes using a hand masher add salt rosewater and lime juice dilute with water and place a cover on the pot refrigerate till cool.
    Mix and serve along with the grape pulp can be garnished with mint...enjoy...:)

    Maraschino Cherry Lemonade

    Dad got me a big box full of fresh maraschino cherries so confused what to do with them then after some surfing on google saw a recipe for lemonade it was okay but the recipe they'd posted called for canned cherries gave this recipe my twist and it was pure....awesomeness....
    people who cant find these cherries you can try the same recipe out of ooty apple which is totally in season now...:)
    1/2 Cup Sugar
    1/2 Cup Maraschino cherries
    4 Tbsp Glucose powder
    4-5 Tbsp Lime Juice
    1 Cup Water + Cold water and ice cubes

    Method:
    • In a heavy bottom pot add water and allow to boil add sugar and cherries and allow the sugar to melt and the cherries to cook in 10 minutes this process should be done. remove from flame allow to cool.
    • Once the mixture has cooled just by squeezing the cherry the seeds should pop out remove the all the seeds reserve.
    • In a blender add the cherries along with the sugar syrup lime juice and glucose blend well.
    • Strain the cheery mixture and add cold water  adjust as per your taste serve in a tall tumbler with loads of ice lime rings and cherry...enjoy...:)

    Tropical Fantacy

     Happy Mothers Day ... ♥♥♥
    2 Tender Coconuts
    1 Orange (peeled and deseeded)
    1/2 Cup Seedless Grapes
    2 1/2  Tbsp Lime Juice
    4 Tbsp Sugar
    2 to 3 Cups Chilled Water

    Method:
    • In a large bowl add lime juice water and sugar prepare a basic lemonade. the measure given for lemonade is basic however we can adjust the sour and sweet content as per tastebuds.
    • Once the lemonade is done add the orange and grapes along with the tender coconut stir well and chill before serving.
    Serve the drink along with the fruits in a tall tumbler...enjoy...:)

    Piña Colada (My Way)


    Ingredients:
    1 Cup Fresh or Canned Pineapple
    3 Scoops Vanilla or Pineapple Ice cream
    1 Packet Coconut Milk Powder..i.e.25 grams (1 1/2 Cups of fresh Coconut Milk can be added if available)
    4 Tbsp Sugar

    • In a blender add pineapple chunks, coconut milk powder and sugar add 1/2 cup water and grind to smooth puree.
    • Strain the pineapple puree and add back to the blender. you can leave this process out if you like pineapple chunks in your juice.
    • Add ice cream to the blended puree and blend all the ingredients till well combined check for sugar content add sugar if needed and blend...Serve chilled...Enjoy...:)
    Adding white rum to the drink is your preference if you can add 1 1/2 cups white rum and blend well and chill before serving...:)

    Pineapple Mini Bundt Cake - Eggless

    ineapple filled mini bundts! Cute as a button, light and fluffy with the slight hint of citrusy orange and freshness of pineapple in every bite - A sweet n refreshing pure spring- summer time treat!
    I go for a light breakfast especially on weekdays. Be it a bowl of cereal or oatmeal or a quick sliced bread sandwich with some fruits and veggies. To keep things interesting, I always find myself looking for ways to come up with interesting but light and yet 'breakfasty' recipes. I have found that a light muffin or a light fruit bread comes really handy.
    Here's a recipe for homemade pineapple mini cakes that I made in my adorable mini bundt pan and which can be very easily made in a muffin pan if you don't have a mini bundt pan. It was really liked by hubby and my princess alike. It is mildly sweet, has a distinct taste of pineapples and is extremely light that makes it just right for breakfast. I love baking with different fruits and this one sure is a keeper.

    Lemonade My Way

    Ingredients:
    6 Tbsp Lime Juice
    10 Tbsp Sugar
    2 Tsp Falooda Seeds/Basil Seeds/Sabja
    1/4 Tsp Cardamom Powder
    4 Cups Water (Chilled)
    Pinch of Salt to taste.

    Lets Prepare:
    • Always clean the falooda seeds once you get from store check for dust and sun dry before use.
    • In a bowl add the falooda seeds and add water allow to soak for 10 minutes it will double in size and its ready to use.
    • In a large mixing bowl add the sugar and lime juice along with the cardamom powder stir and make sure the sugar has dissolved add water mix well.
    • Add the soaked falooda seeds mix cover and chill for 10 minutes. serve chilled...Enjoy...:)

    Aam Ka Panna (Raw Mango Juice)

    Ingredients:
    1 Raw Mango
    Fist full Mint leafs
    1/2 Cup Jaggery or Sugar
    1/4 Tsp Jaljira Powder or Cumin Powder
    1 1/2 Tbsp Lime Juice
    1 Pinch Salt
    3 Cups Water
    Method: 
    • Wash the mango and mint leafs throughly pat dry.
    • Finely chop the mint leafs.
    • Chop the mango into large chunks.
    • In a heavy bottom pot boil the water add the mango to the boiling water and cook till well done.
    • Once the mango has cooked the skin will discolor the pulp will cook to a soft constance.
    • Remove the cooked mango and reserve in a plate.
    • After removing the mango to the same water add sugar or jaggery  stir and allow the sugar to melt remove from flame and allow to cool.
    • Once the cooked mango has cooled a bit remove the pulp using a spoon or knife.
    • In a mixer jar add few mint leafs along with mango pulp and grind to a puree add water to grind if needed.
    • Mix a pinch of salt to the jaggery water add the mango puree and mint leafs stir well add lime juice, jaljira powder and stir well.
    • Chill the prepared mixture just before serving add chill water and sugar if needed stir well serve chilled...Enjoy...:)

    Strawberry Lassi

    Ingredients:
    5-6 Strawberry's
    1 Cup Yogurt
    2 Tbsp Butterscotch chips
    1 Tbsp Sugar
    1/2 Cup Ice cold water

    Lets Prepare:

    • In a mixer jar add the strawberry's, sugar and water blend well.
    • Add the yogurt and butter scotch chips along with bit more water and blend well.
    • Chill in the fridge for 15 minutes before serving mix well and serve chilled in a strawberry decorated tumbler...Enjoy...:)

    Orange Olive Oil Loaf Cake


    ey again folks. So my story this time is as simple as... I just felt like baking. Baking something nice and flavorful and... citrusy. The only citrus flavor I felt like was oranges. But then I felt a real urge to include chocolate. On second thought though I decided against it... and I am glad I did. This loaf cake came out so perfect with such nice and clean yet with a burst of citrusy flavor that it could even be a mood lifter when you are feeling a little blue. On a more technical note, I do want to point out that with this bake I realized that the EVOO really does wonders to a fruity cake while being healthier than regular oil, and as you will realize from the recipe below, it is really really easy to put together.

    Musk Melon Pannakam

    Ingredients:
    1/4 Piece Musk Melon 
    1 Cup Jaggery
    3 Pods Cardamom
    1/4 Tsp Ginger Powder
    1/2 Lime Juice
    3 1/2 Cups Chilled Water
    1 Pinch Coarse Salt
    Lets Prepare:

    • Soak the jaggery and salt in chilled water for 20 minutes make sure jaggery dissolves completely.
    • Using a strainer strain the jaggery and reserve.
    • Using a mortar and pestle crush the cardamom. 
    • Clean the melon remove the seeds and skin chop into small pieces and reserve in a bowl.
    • Using your hands or back of a spoon mash the melon into fine bits.
    • Add the melon to the jaggery water tip in the cardamom and ginger powder squeeze in the lime juice stir well and serve chilled...Enjoy...:)

    I love melon pannakam. this recipe is famous in Karnataka very traditional and festive drink we normally would prepare pannakam during ram navami which is in summer i was surprised to find the fruit during winter and it was super cheap...In summer I would prepare this pannakam in bulk and store in fridge and we would serve all our guest this pannakam during summer trust me its to good refreshing and healthy if your kids do not like milk or breakfast serve them this pannakam they will be happy...I enjoyed preparing and sharing this recipe...keep smiling and spread happiness...:)

    Rose Milk Recipe

    Ingredients:
    2-3 Drops Rose Milk Flavor
    2 1/2 Tbsp Sugar
    1 Cup Skimmed Milk
    1/2 Cup Chilled Milk (for blending)
    This measure is for single serving
    Rose milk is really famous summer drink in India. Lot of my friends from YouTube had requested me to do a video. when i told my parents about me preparing rose milk and going to record they found it hilarious. but this recipe is really easy and can be prepared with in minutes normally lot of  my friends add vanilla ice cream and heavy whipping cream but its not good for every body kids can enjoy with ice etc but for adults and people who are calorie consicous may not like it so i tried to reduce a lot of fat content and used just skimmed milk  to prepare this recipe its healthy and for a change from our routine coffee or tea its nice to have some flavored milk.

    people who cannot find rose milk essence can mix rose water with some red color same method for almond/ badam milk you can add almond essence with cardamom and yellow food color to make badam milk  for pista milk you can add pistachio flavor mixed with cardamom and green color  for mango milk add kesar and mango flavor and few drops of orange color to make mango milk. 

    Step 1:
    • Heat the milk add sugar bring to a boil keep stirring well once the sugar has melted well remove the milk from flame bring the milk to room temperature and place the milk in the freezer we want the milk to crystallize as show in the photo below.    

    Lets Prepare:

    • In a blender add 2 scoops of chilled crystallized milk and 1/2 cup of chilled milk add sugar if needed add few drops of the rose or any flavor and blend well serve instantly this recipe has to be prepared just minutes before serving so keep all ingredients chilled do try this recipe...Enjoy...:)
