Gobhi Takatak / Stir fried Spicy Cauliflower!

This is the flower that is bought the most often into our household. No offense to dear hubs, the red rose is in fact a close second. Jokes apart, the cauliflower is indeed a versatile vegetable. At least in India, the cauliflower, which is mostly available during colder weather, is cooked many different ways, liked by most and is eagerly awaited to be available in the local markets. To be honest and no offense to anyone, I believe not enough justice is done to the cauliflower here in the US. The few things that I have seen made with it like mashed, baked with cheese or even served raw with a dip just does not extract enough mileage from this vegetable.
This recipe is one of my most favorite cauliflower dishes. A nice big floret, all wrapped in the thick gravy just explodes with flavor in your mouth and if you added enough heat in it as I do, the kick of the heat with the spices just makes you want to do a happy dance. If you a fan of curries, this one is a must-try.

Zucchini Thepla/Spicy Zucchini Flatbread

rowsing around the categories on USMasala you will notice a couple of different other Thepla recipes - the classic Methi Thepla and the Tofu variation of it. Here's another one.
You may find this a little unusual but the thought of this dish puts me on a train with my family... the train speeding through the country and I find myself sitting on the lower berth (after of course having fought with my brother for the window seat) with my gaze fixed outside staring at the lush green crop fields that race past us and the warm yet cool breeze rushing in as we wait for the train to take us to our destination... then you are suddenly pulled out of the trance by the loud sound of your name... thats mom demanding we get together as it was lunch time... and there it is... she opens her tote bag and pulls out a couple of boxes. Wrapped in tinfoil in those boxes are these wonderful flat breads with awesome dry potato curry and pickle. The already beautiful breeze is now filled with the wonderful aroma of the roasted fennel and carom seeds from the bread and the potatoes.
Mom almost always made these as lunch and as dinner when we traveled. She claimed they stayed nice and fresh even after being packed for several hours... and fresh they were... gone in minutes. Of course I didn't think much of it those days... after all that was mom and this is what she always made, right? ... aah... the things we take for granted.

Spinach Mushroom Cutlets


hat to make for our daily evening snack always gets me thinking. I try to go for something quick, nutritious as well as fun. The 'fun' part is especially important to get my little princess excited to try it out and obviously I care about the nutritious aspect. In short that is the basis on which I came up with this cutlet. It turned out to be a good way to get spinach into my little one. Hubby was sure enough onboard as he mostly is with anything fried :) You can dip them in your favorite sauce or chutney and eat them as is or stick them inside a bun and enjoy as a sandwich.

Gud aur til ka Paratha / Jaggery and sesame stuffed flatbread

My mom is a queen of innovation. Especially when it comes to innovation with leftovers. She would come up with cool ideas to convert things that everyone deemed throwaway into dishes that would fly like hot cakes.
In India it is tradition to take some sweets if you are visiting a near and dear. My mom being quite the entertainer, we used to have a rather busy guest 'traffic'. Now not everyone has a big heart to take the best quality stuff so quite often we would wind up with sweets that no one wanted to eat. This one time mom came up with the idea of mixing it all up, boiled it in some milk to make a thick filling and made stuffed parathas out of it. Papa and my brother ate them up in seconds.
This dish is another such example of my mother's innovativeness. After the festival of Sankranti, we would usually have lots of left over 'tilkut' (a sweet candy made of sesame and sugar). She used a similar technique on the tilkut to convert it into absolutely fabulous sweet stuffed bread. I wanted to give this a shot but unfortunately I couldn't find any tilkut here. I had some sesame seeds handy and some jaggery so I used them together to create the tilkut effect. Hubby loved it :)  So here's another one inspired from and for my dear mom.
