Sabudana Kheer/Tapioca Pudding with Saffron and Nuts



ndia is the land of festivities. Believe it or not but national and regional festivals together would probably go into three figures. What's more is that these vary widely in the way they are celebrated from one region to another. Some are quiet and solemn including prayers and worship, some an expression of love and affection and most are attributed to deities and celebrated with quite the pomp and fervor.

Many of the regional festivals often are the quiet and solemn kind (but still elaborate nonetheless) and they are often associated with fasting. Fasting is a way of worship where you eliminate certain food groups from your diet for the period of the fast or sometimes, depending on how resilient you are and the method the particular festival dictates, not eat or drink at all.

Chocolate Tapioca Pudding

Ingredients:
1/2 Liter Milk
1/2 Cup Sugar
3 Tbsp Corn Starch
3 Tbsp Coco Powder
1/2 Cup Tapioca Pearls/Javvarisi
1 Tbsp Chocolate Syrup (Optional)
For Garnish, Chocolate Chips, Sprinkles, Cherry,Chocolate Noodles(Optional)

First Step:
  • Wash the tapioca pearls twice. soak the tapioca pearls in 3 to 4 cups water for 4hours till the pearls double in size.
Second Step:
  • Boil the milk in a heavy bottom pan add sugar and keep stirring till the sugar dissolves.
  • Drain the tapioca pearls and add to boiling milk cook till the pearls turn transparent.
  • Add the coco powder and chocolate syrup stir well.
  • Dissolve the corn starch in 3 tbsp water.
  • Add the corn starch to the boiling milk and keep stirring 
  • continuously till the milk pudding starts to coat back of the spoon. remove from flame and allow to cool.
  • Once the pudding has come to room temperature place the pudding in fridge and allow to cool for 3 hours.
Third Step:


  • Remove the chilled pudding from fridge add the chocolate chips and mix well. if you find the pudding is to thick you can add extra milk and mix. 
  • Serve the pudding in a bowl garnish with chocolate noddles, color sprinkles and cherry serve chilled...Enjoy...:)

Tapioca & Apple Payasam (Pudding)


Ingredients:
1/4 Cup Tapioca pearls (Sabudana,Javvarisi)
2 Tsp Chopped Cashew, Pistachio,Almonds
1 Dried Fig Chopped (You can add more..:)
3 Cardamom pods
2 Tbsp Sugar
2 Tbsp Milk powder
2 Medium Apples(cored and chopped into pieces) 
500ml Milk
Rose water few drops
1 pinch Yellow food color (Optional)
1 Tbsp Clarified butter (Ghee) 

First Step:
  • Soak the sabudana or tapioca in water for 3 hours before preparing the pudding.
  • core and chop the apples into pieces and soak in cold water and set aside.
  • Chop all the nuts and set aside.
  • In a fry pan add clarified butter and fry all the chopped nuts till light golden color and set aside.

Lets prepare:
  • Heat a heavy bottom pan and boil milk reduce the milk a bit and add the soaked tapioca the tapioca has to turn transparent that and soft this is the indication that the tapioca is cooked add cardamom pods i peeled a bit and added the cardamom add sugar and milk powder and allow the sugar and milk powder to dissolve completely by this time the milk should have a thicker constancy check in case you need to add extra sugar at this point add the fried nuts stir and remove from heat before serving drain the apples from water and add to the pudding and serve...this pudding tasted excellent when it was hot you can serve it cold as well...do try this recipe and enjoy...:)

Sabudana Vada (Tapioca Vada)

Tapioca pearls (Sabudana)Also called as javvarisi In tamil we get 2 varieties of tapioca 1st regular and 2nd nylon jawarisi. 2nd quality sabudana is good for pudding and kheer also nice for vada or idlly the 1st quality is good for fryems ect. 
Ingredients:
1/2 Cup of  Tapioca pearls (Nylon Jav varisi)
1/3 Cup of Maida (All purpose flour)
1/4 Cup of Rice flour
1/2 Cup of Dill leafs (finely chopped)
1/2 Cup of Fenugreek leafs (finely chopped)
2 Tbsp of Coriander 
1 Onion (finely chopped)
3 Green Chilly (finely chopped)
1 Cup of Yogurt
Oil for frying
Salt to taste.


Method:
* First Step: In a bowl add half a cup of yogurt and tapioca pearls and soak for 6 hours.
* The soaked tapioca will double in size and increase in quantity.


To the pre soaked tapioca add the maida, rice flour, onion, chillies, coriander, dill leafs, fenugreek and salt mix well to a ball consistency heat a wok with enough oil to fry the vada creat medium size ball out of the dough flatten and deep fry in oil serve hot with ketchup enjoy ...:)

Sabudana khichdi

Sabudana (tapioca or sago) khichdi is a very famous dish from the state of Maharashtra but is popular all over India. It has a different taste in every bite, spice from the chillies, crunch from the peanuts, tang of lemons and slight sweetness from the sugar. This makes for a mouthwatering lunch, breakfast or snack. It is often enjoyed during the time of fasting, in fact as a kid I used to eagerly wait when my mom used to break her fast as she always used to make this dish. Nowadays I don't wait for fasts :-). I make it whenever I crave for some quick and easy yet delectable dish. The only time consuming part is soaking the tapioca otherwise the whole dish is ready in a matter of 10 minutes.
