Roasted Parmesan Garlic Brussels Sprouts with Sour Cream Dip


Who wants to eat brussels sprouts, right? If you were to make a list of commonly available vegetables that most people dislike, these little guys would most probably be very near if not the top of that list. Heck they use these even in TV shows when they have to show parents trying to stuff veggies into kids and the kids kicking up a fuss. Well, not in my family. Hubs loves them and the way he likes to put it "Who wouldn't especially if made the way you make 'em"! This was a new vegetable to me as well until a few years ago when their cute little cabbage shape got my attention. No points for guessing that curiosity got the better of me and I got a batch immediately. Of course the first thing I tried was to cook them like cabbages - in a curry. That was a success. Since then I have cooked them several different ways but these roasted ones are the most popular in my family. They are easy to make, not to mention very nutritious and with their crispy exterior and juicy soft insides, they make a great appetizer or a side to a meal.

Cauliflower Garam Masala Pilaf

There is a simple but interesting theory behind this dish - a theory that anyone that is tasked with making nutritious and tasty yet quick lunches during the busy weekdays will appreciate. A simple rice based one pot meal that is a very good way to get the needed veggies into your family in the form of a wholesome lunch and yet can be done in under fifteen minutes. I do a few kinds that I change around every week. This being one of them that goes down with smile with hubs and the kid alike.

Whole Wheat Stuffed Buns


ince the past few days I was craving those spicy veg stuffed buns which we used to always eat from our local fav bakeries back home. These are basically soft buns stuffed with a spicy veg filling. Also the fact that Mr. Yeast  and I are now on good terms... in fact we are now friends :) gave me some added courage to try it for myself. Let me tell you, if you are yeast skeptic as I was before, once you start getting comfortable with yeast you will want to use in everything... they are addictive. After making the pav buns a few weeks ago I thought to give this a try and boy I was glad I did as these turned out fantabulous... and so perfect we loved it. They were tasty to the last bite and very very addictive.  Smelled heavenly while baking and were gone in no time once they came out of the oven. A super hit!!!! The best part my hubby said these are the best buns he has ever eaten and they tasted better than the store bought ones ;D
I tried  to make them little healthier by using whole wheat  flour... so that I can continuously convince myself while gobbling them up that these are healthy and so ok to eat and not feel guilty afterwards... he he which I did!!

Kathal (Jackfruit) Biryani



If you have been following my posts recently you are probably familiar with my kathal (jack fruit) adventure. So as promised, here is my second dish in the kathal series.
This dish also was very timely as my brother was visiting for Raksha Bandhan and he is a die hard fan of chicken biryani. So I had to make that for him (will post the chicken biryani sometime soon). Being vegetarians, I couldn't leave us, specially dear hubby, biryani deprived... and I took it as a challenge to make something as good, if not better. Jack fruit biryani seemed the most logical choice. Followed my mom's recipe for chicken biryani just replacing the chicken with jack fruit and it turned out great. Both hubby and bro were happy and I got to use some of my huge pile of jackfruit, win win :).This recipe is simple and easy yet incredibly delicious.

Veg fajita wraps with avocado corn salsa


Mexican is my favorite only after Italian (and obviously Indian) cuisine. I personally think Mexican cuisine is always a favorite for us Indians as it has so many similar spices and flavors – cumin, coriander, garlic, chili etc. Fajitas are a very famous part of this cuisine. Traditionally it is made with marinated and grilled skirt steak. The word 'Fajita' is derived from the spanish word faja which literally means belt. It is made with tough thin cut skirt steak. The meat is usually wrapped in soft tortillas with a variety of garnishes. Us being vegetarians, I always try to recreate the meatless versions of these popular dishes at home.
So I combined a lot of different colored peppers, some green beans and onions, marinated them in lemon and some spices from my very own desi spice rack, stir fried them, wrapped in flour tortillas, top it with my avocado corn salsa, some sour cream and mexican style shredded cheese... total yum... I don't think you'd miss the meat at all!

It was easy, fun and delightful... I know I will be making this often :)

Vegetable poha

I remember, mom always used to make this when we were kids .. used to be my most fav breakfast. We used to call it chuda ka pulao as poha is called chuda where I come from. She also sometimes used to pack our lunch boxes with it and it was a great hit with my school and college friends :) this is very easy and quick to make.. can be put together in a jiffy. It is a wholesome one pot meal. It can be made numerous ways and every version is my favorite. My hubby likes his poha with lots of gobhi, peas and aloo.. so this is how I often make it.

Vegetable chop





Vegetable chop or roll is a famous street food that is found almost all over India, with minor differences in ingredients here and there. Whenever I think of them, I go back to my college days and to my college canteen, they served the meanest veg chops.. they were to die for.. yum! Hubby also remembers it as his favorite street food from his home town. An absolute favorite with everyone, they are very versatile too, serve them with some ketchup or chutney as an appetizer or for a change stuff them inside a bun and it converts into a amazing veg burger and a quick fix meal. You can also serve them as chaat with some chhole and chutney and enjoy the compliments. Can be made using different veg.. or whatever you have in your refrigerator (except the beets which I think is a must). Perfect for a rainy day they are addictive. They are best deep fried (and its okay once in a while :-).
I once made this for my hubby's office potluck (over 70 of these) and he tells me they were the first ones to go, he was very proud :-)
