The first whiff of this drink will put you somewhere in the middle east that too in the times when kings and queens prevailed and they often enjoyed exotic drinks from ornate cups. At least that where it put me. Yes, exotic is the right word for this drink. To bring you back to modern times, thaw out of winter and welcome spring while you enjoy your favorite TV show at the end of an exhausting day - it is guaranteed to put a spring in your step - no pun intended. I already spoke enough about the smell and yes that is the best part and what's more, that fragrance makes the crisp bubbly lemonade - the kind that you have had several times before - just that extra special.

Pink Lemonade

ot sure if its the summer doing it or its just me but lately I have been enjoying making different kinds of lemonades. Takes few ingredients, minimum effort and the result is a tasty drink that everyone enjoys and you get compliments for as they come back from school or work and feel the need to cool down. This is one such in the series that I made lately.As the weather warms up, if you are craving for something cold, bright, crisp and refreshing, this is the drink for you! Pretty, romantic and glamorous and a color that is to die for. This drink always leaves an impression. The fabulous hint of the berrylicious fresh cranberry flavor riding over the base of refreshing citrus of lemons, this drink has the taste that you will remember and will want to come back often to.
A wonderful thirst quencher on a hot summer day or any day for that matter. Pink lemonade makes for a delicious party drink or for just a casual get together.

Methi Matar Malai with a Fragrant Saffron Cumin Scented Pilaf
ppears that my last few posts have been about making dishes with my favorite ingredients. Here's a dish featuring another one of my very favorite, fresh Methi or Fenugreek. To give you an idea how much I love it, whenever I am at our local Indian grocery I eagerly scan through each one of those yellow wooden plank boxes sitting randomly on the floor where the nail is still sticking out from where the lid was forcibly pried off, secretly hoping to find one such box with bunches of fresh methi leaves stacked up. When I lay sight on such a box, my pulse does go up a few beats a minute, I kid you not. Hubby is well aware and when he goes grocery shopping by himself and get me a couple of bunches, he sure earns a few points ;) I also grow them in my backyard as well to have a limited yet regular supply. Last but not the least, I always keep a box of Kasoori methi or dried fenugreek leaves in my pantry just in case I run out in my backyard and the stores don't have it either, proof enough? lol.

Mirchi Ka Salan/Green Chillies in Spicy Tangy Sesame Peanut Sauce
es you read it right. A curry of green chillies! If you take my word for it, this curry is utterly lip-smacking and delicious besides of course being... yes... hot! Mirchi, in hindi, means chillies/peppers and salan is hyderabadi lingo for a creamy curry or sauce. This curry is not just something I made up on a day I was overzealous. It in-fact is a very popular curry from the hyderbadi cuisine. So much so that this curry was popular as a favorite of the royalty of the yesteryears.Hyderabadi cuisine, the cuisine from a region in the south-eastern part of India is highly inspired by the Mughlai cuisine. The word "Nawabi" is as synonymous with the Hyderabadi cuisine as "Shahi" is with Lucknowi. Hyderabadi recipes are famous for their rich taste and unique use of ingredients, roasted spices and aromatic flavors. This dish has all these components and more... chillies simmered in roasted peanuts, sesame, coconut sauce with lots of indigenous spices cooked to perfection give this curry its unique spicy, sweet and tangy taste. It is very easy to put together and has a very rich creamy taste that will compel you to make it over and over again.It is nutty with peanuts, has a distinct taste of sesame seeds and the bite and heat from the chillies... ahh.

Saffron Mango Lassi
ow summer is not my most favorite season but for some reason I have a strange sense of longing now that it is almost over. This drink is an ode to summer saying goodbye and what better than to do that with with king of summer fruits ~ the Mango! The sound of 'Lassi' reminds me of hot summer afternoons, a tall glass filled with a chilled frothy yogurt drink. Summers in India are even harsher than here but they still used to be fun. Not just because we used to have long vacation away from school and we were allowed to just go out and play, visiting grandparents, all the pampering .. but also because the season would bring a lot of fun and cool food and fruits and berries - mangoes, jamun, lassi, a million varities of kulfi, soda pops, ice-chuski and the list goes on.Lassi is a sweet chilled yogurt based drink is especially loved by all n very popular all over India especially in the northern and north-western parts of the Indian Subcontinent. Being made of yogurt it has a cooling effect so just the right thing to do to gulp own a tall glass before you head out in the scorching sun.

Zafrani Zarda Pulao with POM!
t gives me great pleasure to let you know that a scout team from POM Wonderful apparently liked my work that I publish through this blog of mine and contacted me the other day. They offered to send me a case of their wonderful juice. The best part, there was no catch. All I had to do was what I already love to do, come up with some recipes; and with a great product like POM it was not too difficult a task.You guys most likely know about POM. Yes, the deep purple-pink juice in the cute double spherical looking bottle that you can find in the juice aisle of practically every grocery store.
As I sat down searching through my brain for ideas, my first instinct was a spiced juice blend, or ice-cream or the like. I wanted to go with something more original and exotic so I set those ideas aside and stuck to my roots. Hence came the idea of using a POM reduction in an exotic rice. When I asked hubby for his feedback after he had this rice for dinner, he summed it up aptly as a 'Dish fit for Royalty'.

Vegetable Seekh Kebab with Green Chutney
he word "Kebab" has always fascinated me. I don't know... just the sound of it is so sophisticated and exotic that whether you have ever even seen it or not, you want to try it when you hear it... and believe me you will love it when you do :) But sadly for me they have always been synonymous with meat based preparations and being a vegetarian I just never could have any. Lately I came to know about veggie kebabs. I was elated by the thought that I could now eat kebabs and tried to recreate these beauties and it was exactly as I though it would be... exotic, elegant and heavenly tasting. These are perfect appetizers for get-togethers and pot lucks. Super easy to make and your guests will definitely go WOW when you serve these. You may find several recipes for kebabs if you look around but in my opinion this is an easy and no-fuss version that you will want to make over and over. Also, traditionally they are made in a tandoor or deep fried but I just shallow fry or broil them in the oven so they are very healthy too... lots of veggies and very little oil. As everything that goes in it is already cooked so very little oil is needed.
If you are making a large batch of the kebabs say for a big gathering, you can also bake them on a baking sheet. Just spray the sheet with cooking oil and broil them on high in your oven for 5-6 minutes on each side.

The best chocolate cake ever!
The celebration of Love is the most special kind of celebration. Love is eternal and omnipresent. It needs no special day or moment to be enjoyed but still having a day a year in our lives when we take time out to sit back and marvel at its wonders, express it in our own unique ways to show our loved ones that they are special is very welcome.
You might think I made my favorite chocolate cake this year; well you are right, this is my favorite chocolate cake but the reason for me making it this year is actually hubby. Believe it or not, he is not much of a chocolate lover (the one thing I don't understand!) but this chocolate cake he totally loves. At a good time, he can eat a couple of whole big slices. This cake was in fact the one that actually get him a little interested in chocolate since when I first made it (I owe you Ina for this one big time). The coffee and chocolate with the yummy butter-cream frosting is actually enough to create magic but throw in a couple of pink and red hearts and sit down with a slice each with your beloved and then tell me if you don't experience magic!

Instant and Eggless Dark Chocolate Mousse
read somewhere "A man cannot live on chocolate alone but a woman sure can!"
How long did you think it would be? I mean, how long did you really think it would before I came back with another chocolate recipe? So here I am unable to control my urge for that rich, creamy, chocolaty, irresistible goodness! This is an incredibly decadent, luxurious chocolate mousse recipe. Silky smooth luscious wonderful heavenly decadent perfectly textured (enough with the adjectives already) dessert by the one and only Nigella!
There is something romantic about mousse. Perhaps it’s the chocolate or the combination of light airiness and rich flavor, but whatever it is I think chocolate mousse makes a perfect treat for Valentines or any other romantic occasion. One thing that kept me a little away from this delicacy was the raw eggs, but only until I found this winner recipe. This Chocolate Mousse recipe is one of those easy simple recipes where Chocolate is the star and it looks like you've spent all day making it. Nigella rocks!!

Methi - Paneer Biryani
Apparently fresh green Methi (fenugreek) leaves and I have a special relationship. Whenever I see a good fresh bunch at any grocery store, I always always buy. I buy as much as I can cook over the next several days without any of it going to waste. A couple of days ago I got two big 'ol bunches from our local Indian grocery store and have made a few things with it since. Here's the first and my favorite.
The Biryani probably needs little introduction. What especially charms me is its versatility in the different variations you can make it in. This version with methi leaves gives the already exotic dish that extra flavor that combined with the slight sweetness of paneer and the texture of each individual grain of rice just gives a burst of flavors in your mouth.
