Rose Lemonade

The first whiff of this drink will put you somewhere in the middle east that too in the times when kings and queens prevailed and they often enjoyed exotic drinks from ornate cups. At least that where it put me. Yes, exotic is the right word for this drink. To bring you back to modern times, thaw out of winter and welcome spring while you enjoy your favorite TV show at the end of an exhausting day - it is guaranteed to put a spring in your step - no pun intended. I already spoke enough about the smell and yes that is the best part and what's more, that fragrance makes the crisp bubbly lemonade - the kind that you have had several times before - just that extra special.

Curried/Masala Couscous salad

 do love cooking elaborate meals and I do know (most days) I am not lazy at all when it comes to that ~ But then there are days when I don't even feel like lifting my little finger (not happening with an hyper-active toddler). All I would love to do is to snuggle under my blanket and settle down with a good book or just randomly blog hop or just sit on the couch and watch TV. Fixing a meal on such days is such a pain. I am sure most all of you are going in your head 'yeah me too'. This filling and comforting salad is so apt for such a time. The other day, kiddo and I were all by ourselves, daddy was in a two day business conference. We made this super easy delicious couscous salad for lunch and kiddo totally loved it, the result that pleases me the most.
This one is packed with nutrition and is very filling. I love couscous and always have some in my pantry. One of the easiest and very versatile ingredients to work with. I have made it several different ways but this time around I added a some indian spices and the salad ended up being a fabulous fusion meal.

Roasted Red Pepper-Tomato Pesto Hummus


ot much of a story this time, just wanted to combine two of my favorite things in one i.e. pesto and hummus.
I love hummus. My love affair with hummus started a couple of years ago. Since then, I’ve made a few different types including of course the traditional hummus. Hummus means chickpea in Arabic. It only requires a few ingredients and about five minutes to make. It pairs wonderfully with fresh vegetables, pita bread, and pita chips. This is one snack that you don’t have to feel guilty about eating! 
Roasted red peppers add a delicious twist to hummus, plus they give it some extra nutrition. If you like hummus and if you like the sweet smoky flavor of red bell pepper you gotta try this. Now pesto - I am a die hard fan - love the concept, taste everything. It can jazz up everything- so today I added some left over homemade tomato pesto in the hummus and bingo - the creamy dip with a hint of mild smokiness and taste of bell peppers, some Indian spices, tanginess of the tomato pesto and the kick of lots of garlic and evoo... yummmmmmmmy... my kinda stuff!! Perfect for dipping. Also can be used as a spread for a savory sandwich. I love all kind of hummus as a dip with baked pita chips (which I am totally addicted to). You can also serve it with cut up veggies.
