Condensed milk orange pound cake

ou would probably agree with me that oftentimes we crave for simple treats. No bells and whistles, just simple yet full of flavor. Don't get me wrong, bells and whistles are good and I am all for them but then there is always that morning that you want a simple breakfast, that evening that you want something nice and simple with your hot tea or coffee or that something that you can leave on the kitchen counter that hubby in his usual nonchalant self, lost in his own thoughts, picks up a piece and stops, looks around, gives you a complement on how flavorful it is and goes back to being himself. For me, this orange cake with a burst of citrus comes very close to that description. Light and fluffy,  sweet and refreshing pure spring-summer time treat! It could even be a mood lifter when you are feeling a little blue. 
I go for a light breakfast especially on weekdays. Be it a bowl of cereal or oatmeal or a quick sliced bread sandwich with some fruits and veggies. To keep things interesting, I always find myself looking for ways to come up with interesting but light and yet 'breakfasty' recipes. Interestingly enough this cake has worked many-a-times for me as a light breakfast cake. Then of course there is the possibility of dressing this cake up with frosting and it becomes a dessert. Eggless Vanilla Chocolate Chip Cake



The humble vanilla cake is usually very well liked in an average Indian household especially if it is eggless and home-made. The oven which is a regular fixture in almost every kitchen in the US is usually not that common in the Indian middle class kitchen. Although this is changing rapidly, for the most part, cakes there are still made in a small portable electric oven. If you've ever seen or tried baking in one of these, you'd know that it is not the easiest of things to do.
For these reasons, the simple eggless vanilla cake was a big favorite in our family as well. This recipe is so popular in my family tree that every member that can cook has a written copy of it and has tried their luck at baking it atleast once. All the credit goes to my aunt who joined a baking class and where she got this recipe and then the rest is history. Since then I have of course baked several different types of cakes but this one still holds a special place in my heart. I have made some minor modifications like using chocolate cips instead of cocoa powder but the recipe is essentially the same. It is very easy to make, calls for a very few ingredients and tastes awesome.

Whole Wheat Stuffed Buns


ince the past few days I was craving those spicy veg stuffed buns which we used to always eat from our local fav bakeries back home. These are basically soft buns stuffed with a spicy veg filling. Also the fact that Mr. Yeast  and I are now on good terms... in fact we are now friends :) gave me some added courage to try it for myself. Let me tell you, if you are yeast skeptic as I was before, once you start getting comfortable with yeast you will want to use in everything... they are addictive. After making the pav buns a few weeks ago I thought to give this a try and boy I was glad I did as these turned out fantabulous... and so perfect we loved it. They were tasty to the last bite and very very addictive.  Smelled heavenly while baking and were gone in no time once they came out of the oven. A super hit!!!! The best part my hubby said these are the best buns he has ever eaten and they tasted better than the store bought ones ;D
I tried  to make them little healthier by using whole wheat  flour... so that I can continuously convince myself while gobbling them up that these are healthy and so ok to eat and not feel guilty afterwards... he he which I did!!

Garlic Dinner Rolls/Pav Bun



gain like a lot of other things, I always considered making my own bread way out of my league. I love to bake and I love bread so I had always wanted to give it a shot. After getting my cakes, muffins and naans right, I finally gathered enough courage to give these rolls a shot. I was inspired by our local Italian restaurant. They have awesome garlic rolls and they serve them free of charge when you go for dinner. So you can imagine I always ensure I get my fix whenever I go for dinner :) My attempt at this worked and the buns turned out perfect. The smell of fresh bread baking in the oven is absolutely irresistible... Ahh... the entire house is filled with that wonderful aroma. It is almost therapeutic for me :)

Mango nut ice-cream

Making a good ice-cream is typically considered a very difficult task. I know because I have been there. I always thought good ice-cream can never be made at home or at least not without an ice-cream machine. But when I made Kulfi a few times, I figured why not try making ice-cream at home. I am glad I tried because I know this is a keeper recipe and will be a regular in our household. I had some mango puree left after making the mango lassi, also my brother and hubby are crazy for mango flavored anything, so I made mango ice-cream. I also added a few cashew nuts as we like the nutty taste in our ice-cream.This recipe is so easy that you will be amazed by the result, no churning, no ice-cream machine, no long list of ingredients. Ras Malai - My 50th post :)

 can’t believe its my 50th post already.. and it’s been loads of fun all the way. USMasala is not even two months old and I am very very proud of this milestone :) I have been totally addicted to the world of blogging... my hubby can vouch for that :D as am ignoring everything else. Your encouraging comments is always the first thing I read in the morning and they always make my day. I have made so many friends and have discovered so many wonderful blogs it feels awesome!! I am thankful to all my readers especially my fellow bloggers who welcomed me with an open heart in the blogsphere with their encouraging words. Guys your love and support is the reason I have become 100 times more passionate about cooking, experimenting, taking beautiful pics... ok now the big confession all the pics of USMasala which I always get compliments for is taken by my dear hubby... so I thank him too for making my blog wonderful and so colorful... Thanks sweetheart!

Pista Falooda Kulfi


Kulfi is an indian version of ice-cream... often flavored with cardamom, saffron and nuts, it has a very unique flavor. It has similarities with ice cream in term of texture, taste and of course the fact that it is frozen milk! But unlike Western ice creams, kulfi is not whipped, resulting in a solid, dense frozen dessert.Where I come from, it is often served with falooda noodles( kind of like vermicelli)

During the summers in india, there is no dessert more popular than kulfi.
So, there is an easy way to do things and then there is a not-so-easy way! Here I will show you the easy way :) It is often considered very hard to make, stirring the milk for hours in the kitchen and all... but today I am giving a very fuss-free easy-breezy kulfi recipe. It is soooo easy even kids can make it. Infact it is a great cooking/fun project to do with kids... and they love to eat it too. My daughter is a fussy eater, doesn't even like ice-cream very much but she gobbled this one up.
